Nusret Gökçe: 'Bostancı Çarşı Business School mezunuyuz' diyebiliriz, gördüklerimizi Harvard'da ders olarak öğretiyorlar.

Nusret Gökçe, Bostancı Kasaplar Çarşısı'nda yetiştiğini belirterek "Kasaplar Çarşısı, bu işin Harvard’ı sayılır" dedi. Gökçe, "Bostancı Çarşı Business School mezunuyuz da diyebiliriz. Bizim yaşadıklarımızı, bizim gördüklerimizi bugün Harvard’da ders olarak öğretiyorlar" ifadesini kullandı.

Tuz serpme hareketiyle tüm dünyada fenomen haline gelen kasap Nusret Gökçe, Nusr-Et markasını yaratma süreciyle ilgili olarak Hürriyet gazetesi yazarı Barbaros Tapan'a açıklamalarda bulundu.

Gözünü açtığından beri çalıştığını söyleyen Gökçe, ilk işine ilkokula giderken hafta sonları semt pazarında su satarak başladığını söyledi. Hafta içinde de ayakkabı boyadığını belirten Gökçe, "13 yaşıma geldiğimde de kasap çırağı olarak başladım. Nusr-Et markası yaratılırken nasıl bir alın teri döküldü, nasıl bir emek sarf edildi açmak istiyorum" dedi.

Devamında "Bizim ikinci şube, Ankara şubesiydi. Ankara şubem açıldığı günden itibaren her gün akşam servisini Ankara’da geçirip son uçakla İstanbul'a dönüyordum. Sabah erken et seçip, öğle servisini İstanbul Etiler’de geçiriyor, saat 16.00 uçağıyla Ankara’ya gidiyordum. Akşam 19.00’da tekrar Ankara’da servise çıkıyordum. Akşam son uçakla da tekrar İstanbul’a dönüyordum" ifadesini kullanan Gökçe, bu durumun Dubai şubesi açılana kadar 1.5 yıl sürdüğünü kaydetti.

'Kasaplar Çarşısı, bu işin Harvard’ı sayılır'
"Dubai açıldıktan sonra her çarşamba gecesi son uçakla Dubai’ye gidip pazar gecesi İstanbul’a dönüyordum. 3 yıl boyunca Dubai-İstanbul trafiği devam etti. Bu işin başlarında gece restoranda sandalyenin üzerinde çok uyumuşluğum var. Ben Harvard mezunuyum" diye konuşan Gökçe, kendisine yöneltilen "Nasıl yani?" sorusu üzerine şunları anlattı:

"Bostancı Kasaplar Çarşısı’nda yetiştim. Kasaplar Çarşısı, bu işin Harvard’ı sayılır. Orada iş kültürünü, çalışma disiplinini, insan tanımayı ve müşteri ilişkilerini öğrendik. Biz müşteriyi hiç konuşmasa bile ayakkabısından, kol saatinden tanırdık. Bostancı Çarşı Business School mezunuyuz da diyebiliriz. Bizim yaşadıklarımızı, bizim gördüklerimizi bugün Harvard’da ders olarak öğretiyorlar."
Gökçe, "Dünyada et restoranı denince akla ilk gelen şehir Dallas (Teksas). Dallas’ta yeni bir restoran açtın. Etin merkezine Nusr-Et markasını açmaya nasıl karar verdin? Hikayesini anlatır mısın?" sorusunu da yanıtladı.

Dallas'ın her zaman kafasında bir soru işareti olduğunu belirten Gökçe, "Çünkü Dallas dediğin yer, etin başkenti. Orada büyük bir potansiyel var. Çok da büyük bir rekabet var. O yüzden kafamda hep soru işaretleri vardı. Ben Dallas’ta nasıl başarırım? Oradaki rakiplerimden nasıl farklı olurum? Bu sorular hep kafamı kurcalıyordu. Araya korona girdi. Korona döneminde restoranlarımız kapalıyken 6 ay sırf bu soruların cevaplarını düşündüm" dedi.

'Dallas'ta yaptığımız tereciye tere satmak'
"Orada değişik neler yapabiliriz?", "Oradaki insanları nasıl mutlu ederiz?", "İnsanları restoranımıza gelmeye nasıl ikna ederiz?", "Farkımızı insanlara nasıl gösteririz?" gibi sorular üzerinde çalıştıklarını anlatan Gökçe, "Başarılı olduk ki, açtığımız ilk günden itibaren gelen insanların ilgisi ve sevgisi görülmeye değerdi. Koronaya rağmen açılışımızda 200 kişi dışarıda sırada bekledi" ifadesini kullandı. 

Açılışta ne bir PR çalışması ne bir ön davet yaptığını söyleyen Gökçe, "Bismillahirrahmanirrahim dedik, restoranımızın kapılarını açtık. kucakladılar. Bir Amerikalı gelip Adana’da kebapçı açsın. Bizim Dallas’ta restoran açmamız Amerikalının Adana’da kebapçı açması gibi bir şey oldu. Amerikalı gelecek, Adana’da kebapçı açacak, kapıda 200 kişi bekleyecek ve içeride Amerikalının elinden kebap yiyecek. Bizim Dallas’ta yaptığımız tam olarak bu. Nusret Gökçe: 'We are graduates of Bostancı Butchers Bazaar


Nusret Gökçe: We can say 'we are graduates of Bostancı Çarşı Business School', they teach what we see as a course at Harvard.

Nusret Gökçe, stating that he grew up in Bostancı Butchers Bazaar, said, "Butchers Bazaar is considered the Harvard of this business." The butcher Nusret Gökçe, who became a worldwide phenomenon with the salt sprinkling movement, made a statement to Hürriyet newspaper columnist Barbaros Tapan about the process of creating the Nusr-Et brand.

Saying that he has been working ever since he opened his eyes, Gökçe said that he started his first job by selling water in the neighborhood market on the weekends while going to primary school. Stating that he shines shoes during the week, Gökçe said, "I started as a butcher's apprentice when I was 13 years old. I want to open up what kind of sweat and effort was made while creating the Nusr-Et brand."

He continued, "Our second branch was the Ankara branch. Since the day my Ankara branch was opened, I was spending the evening service in Ankara every day and returning to Istanbul with the last plane. I picked meat early in the morning, spent lunch service in Istanbul Etiler, and was going to Ankara with the 16.00 flight. I was going back to Ankara for service at 19.00 in the evening. I was returning to Istanbul with the last plane in the evening, "Gökçe said, adding that this situation lasted 1.5 years until the Dubai branch was opened.

'Butchers Bazaar is considered the Harvard of this business'
"After Dubai opened, I was going to Dubai on the last flight every Wednesday night and returning to Istanbul on Sunday night. Dubai-Istanbul traffic continued for 3 years. I slept a lot on the chair in the restaurant at the beginning of this job. I am a Harvard graduate," Gökçe said. "How so?" He explained the following on the question:

"I grew up in Bostancı Butchers Bazaar. Butchers Bazaar is considered the Harvard of this business. There we learned business culture, working discipline, knowing people and customer relations. We knew the customer from his shoes, wristwatches, even if he did not talk at all. We can also say that we are graduates of Bostancı Çarşı Business School." Gökçe, "The first city that comes to mind when it comes to meat restaurant in the world is Dallas (Texas). You opened a new restaurant in Dallas. How did you decide to open the Nusr-Et brand in the center of meat? Can you tell your story?" also answered the question.

Stating that Dallas has always had a question mark in his mind, Gökçe said, "Because the place you call Dallas is the capital of meat. There is a great potential there. There is a great competition. So I always had question marks in my mind. How can I succeed in Dallas? "How can I be different from my competitors there?" These questions were always puzzling me. The corona intervened. When our restaurants were closed during the corona period, I just thought about the answers to these questions for 6 months.

'Selling cress to the butter we make in Dallas'
"What can we do differently there?", "How can we make people happy there?", "How do we persuade people to come to our restaurant?", "How can we show people our difference?" Explaining that they were working on such questions, Gökçe said, "We have been successful, the interest and love of the people who came from the first day we opened it was worth seeing. Despite the corona, 200 people waited outside in the queue at our opening," he said.

Saying that he made neither a PR study nor a pre-invitation at the opening, Gökçe said, "We said Bismillahirrahmanirrahim, we opened the doors of our restaurant. They embraced it. An American should come and open a kebab shop in Adana. Our opening a restaurant in Dallas was like an American opening a kebab shop in Adana. American."
